Ingredients:
- 2kg of bone in skin on Cartapo Creek Chicken pieces
- Chunky sea salt
- Avocado oil
- Your favourite bbq sauce (We recommend Beerenberg BBQ Sauce)
Method:
- Fire up the Charcoal
- Mix cartapo creek chicken with salt and avacado oil
- Once the Charcoal is ready place the chicken skin side down directly over the heat keeping an eye out for flare ups / burning
- Once the chicken pieces are eavenly seared, rotate them and relocate to indirect heat away from the coals for 15 / 20 minutes
- Rotate again and baste with your favourite bbq sauce / rub
- Exact timing will depend on your grilling method / cooker, however you are aiming for an internal temperature of around 75 degrees celsius.
- Optional: Sear one last time skin down to give added charcoal taste / texture.
- Use a clean brush to add more bbq sauce to the cheicken, then serve with your choice of side dish
Tip & Advice
Hot tip: It’s a good idea to bring your chicken, or any meat for that matter, up to room temperature before you start grilling it. If it’s cold it may take longer to cook or burn on the outside while underdone on the inside. I would put it out on a baking tray, season it and let it sit for at least half an hour before putting it on the grill. Even up to an hour if appropriate.
